I found a recipe from Donna Hay's magazine for zucchini and ricotta puffs and made them using potatoes instead of zucchini. This was quite an interesting experiment as I had no idea how they would turn out. But why not? Even if it was unsuccessful, the ingredients didn't cost that much and I didn't spend hours making them either.

Pina colada pudding

We like anything with coconut in our house. Even our cat, Roxy, loves coconut. In fact, this little, black cat is the one who is craziest about coconut. Just the smell of coconut is enough to drive her almost into a frenzy. I usually give her a bit of the cream when I open a can. I have to make sure to wash the empty can very well because once she managed to get the can from the garbage and was licking the dried milk.

White cut chicken is a traditional Cantonese dish. It is eaten at Chinese New Year and yet is everyday fare. It is so simple a dish. It is just a poached chicken but, my, what a poached chicken! The chicken is barely cooked and the flesh is smooth and juicy. Melt in your mouth flavour is how a friend describes it.

I wasn't sure if it is a good idea to send this recipe to Lore at Culinarty because her blog is about healthy eating and deep-fried foods are not exactly good, healthy food. But she loves savoury foods and, this is an original recipe, so I went ahead. Once in a while, most people do indulge in something fried and these fritters are delicious. Just don't eat too many of them!

Tah Cheen - Recipe

Tah Cheen is a delicious, rice layer cake. It has layers of rice interspersed with chicken and onions and is anointed with a sauce made of saffron, egg yolks and yogurt. Everyone loved it. Then I read that some people also put potatoes in their Tah Cheen. That sounded even better! Rice and potatoes in one dish! There were no recipes given so I figured it out for myself. I can't say that this is the authentic Iranian method but I was quite pleased with my version.

On the South Beach Diet one eats a lot of eggs. The meal plan features eggs or egg whites every day and I like to vary the ways to cook them.

Last week I was wandering down the aisles at the Asian supermarket and smelt something delicious cooking. It was a demonstration for cooking oysters. A crowd of people gathered around to watch the store clerk make omelets with oysters. There was a jovial atmosphere as the people waited to have a sample. As they watched her cooking, recipes were discussed among strangers. One man gave a recipe for oysters braised with roast pork belly. That is a delicious dish but not SBD-friendly but I could adapt the recipe for oyster omelet to fit the Phase I of the SBD.

Bacon Fried rice - Recipe

Bacon fried rice

Fried rice is so easy to make. If you can fry an egg, you can cook fried rice.

It is a dish to make when you want a quick bite. It can be eaten for breakfast, lunch or dinner, or anytime you like. Of course, you should have leftover, cold rice. So when you are cooking rice, add another cup of two to the pot and you'll have a delicious, quick meal the following day. What kind of rice? Long grain or Jasmine is the best but any kind- Uncle Ben's, brown rice - they are OK. Japanese sushi rice is a bit stickier so you have to stir fry more. Just keep the rice moving so it doesn't stick on the pan.
